Zoats (zucchini oats)
Talk about a nutritional powerhouse - zucchini contains a wealth of minerals, including calcium, iron, magnesium, phosphorus, and potassium as well as lots of vitamins including vitamin A, vitamin C, vitamin K, and folic acid, winner!
Ok, this sounds a little weird but zucchini actually has a lovely delicate flavour so the taste of the porridge isn't very different to normal oats. Add in your favourite porridge toppings and you a yummy have breakfast that packs an extra nutritional punch!
50g of plain, rolled porridge oats, depending on how much you usually make yours with
1/2 medium zucchini, grates
a pinch of salt
250ml of milk or water
any topping you like, my favourites are dark chocolate chips and peanut butter or bananas, chopped walnuts and honey
To cook on the stove-top add the oats, zucchini, a pinch of salt and the liquid to a saucepan and bring to the boil. Simmer for 4-5 mins stirring to prevent any sticking to the bottom of the pan
To cook in the microwave place all the ingredients mentioned above in a large microwavable bowl and cook on high for 5 mins stirring halfway through. Leave to stand for 1 min

You could swap out the zucchini for grated carrot and add a pinch of mixed spice for carrot-cake porridge vibes!
