Zoats (zucchini oats)

STAR INGREDIENT

Talk about a nutritional powerhouse - zucchini contains a wealth of minerals, including calcium, iron, magnesium, phosphorus, and potassium as well as lots of vitamins including vitamin A, vitamin C, vitamin K, and folic acid, winner!

Ok, this sounds a little weird but zucchini actually has a lovely delicate flavour so the taste of the porridge isn't very different to normal oats. Add in your favourite porridge toppings and you a yummy have breakfast that packs an extra nutritional punch!

Ingredients
  • 50g of plain, rolled porridge oats, depending on how much you usually make yours with

  • 1/2 medium zucchini, grates

  • a pinch of salt

  • 250ml of milk or water

  • any topping you like, my favourites are dark chocolate chips and peanut butter or bananas, chopped walnuts and honey

Method
  1. To cook on the stove-top add the oats, zucchini, a pinch of salt and the liquid to a saucepan and bring to the boil. Simmer for 4-5 mins stirring to prevent any sticking to the bottom of the pan

  2. To cook in the microwave place all the ingredients mentioned above in a large microwavable bowl and cook on high for 5 mins stirring halfway through. Leave to stand for 1 min

  3.  Add your toppings and enjoy

Make it your own:

You could swap out the zucchini for grated carrot and add a pinch of mixed spice for carrot-cake porridge vibes!
