Speedy Butter Bean Pasta


The creamy butter beans are an excellent source of protein, B vitamins, iron and fibre!

This ten-minute, one pot pasta dish is fresh, delicious and makes for a great lunch or a quick mid-week supper.

  • 2 cups of dried pasta of your choice (I used buckwheat fusilli)

  • 1 tin of butter (lima) beans 

  • 2 handfuls of baby cherry or plum tomatoes

  • 1 cup of green beans

  • a few fresh basil leaves

  • 2 tablespoons of balsamic vinegar

  • 1 tablespoon of olive oil

  • 1 pinch of salt

  • a pinch of ground black pepper

  1. Cook pasta as per instructions on packet 

  2. While pasta is cooking, top and tail the green beans and chop into thirds

  3. Chop the tomatoes in half

  4. When the pasta is almost done pop the green beans into the same pot and cook until just tender

  5. Drain the pasta and green beans

  6. Add in the tin of butter beans, the tomatoes, balsamic, olive oil, seasoning and chopped basil - stir together and enjoy! 

Make it your own:

You could add some chicken, boiled eggs, or a different type of beans to mix it up a bit.
