Carrot Cake Smoothie Bowl


Carrots contain beta carotene (the plant form of vitamin A) which supports healthy vision, immune function, skin health, reproductive health and also provides antioxidants. 

Carrot Cake for breakfast, I think yes. Not only does this taste like the real thing but it also packs a nutrition-punch and will keep you going all morning! There is loads of fibre from the carrots, oats and dried fruit, the walnuts are an excellent source of healthy omega 3 fats.

  • 1 large carrot, peeled and chopped

  • 1/2 cup of rolled oats

  • 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • handful of walnuts

  • 1/2 cup of sultanas or raisins

  • 1 cup of milk of your choice (use more less milk depending on how thick you like your smoothie)

  1. Blend all the ingredients until smooth 

  2. Top with a sprinkle of cinnamon or a few more chopped walnuts for crunch and enjoy!

Make it your own:

If you don't want to use the dried fruit you could always use a green apple to make it lower in sugar, or a banana for a creamier texture.
